Sugar

Sugar is a sweet, soluble carbohydrate that has been used for thousands of years. It is believed to have originated in prehistory through the chewing of sugar cane, but the first documented evidence of its domestication dates back to 8000 BCE in India. The process of chemically refining sugar began in India around 2500 years ago and spread to other parts of the world, such as China, Persia, and the Mediterranean. Cyprus and Sicily later became significant producers of sugar. The term “sugar” also refers to other sweet-tasting carbohydrates, including monosaccharides like glucose, fructose, and galactose.
